For Filling :
- Gobi (Cauliflower) : 1-1/2 cup grated
- Besan(Gram flour) : 2-3 tbsp dry roasted
- Red Chili :1 tsp
- Turmeric Powder : 1 tsp
- Coriander Powder :1 tsp
- Jeera (Cumin Seeds) : 1 tsp
- ginger garlic paste
- Oil : 2 tbsp
- Salt : to taste
For the chapathi dough:
- Wheat flour - 1.5 cups
- Salt - as needed
- Oil - 2 tsp
- Water - as required
Method:
for the filling
- Now in a pan take 2-3 tbsp of besan and on low heat dry roast and set aside.
- Add small sized cauliflower florets in hot water and a pinch of salt (to remove worms if any). Drain it completely and then grate them finely - I used my chopper to do this .Set aside.
- Heat oil in a pan, add jeera allow it to crackle then add ginger garlic paste and saute till golden brown.
- Then add grated cauliflower, salt, red chilli powder, turmeric and garam masala powder and mix well.Cover and let it cook for 10 minutes.Remove the lid and cook for few minutes.
- Add roasted besan and salt to taste and mix well .Cook for 2 minutes and turn off the heat.Let the filling cool down completely.
for the dough
In a bowl mix wheat flour, salt and oil together and water as required slowly mix well and knead a soft dough
Paranthan making
- Now divide the chapatti dough into equal parts and roll into smooth balls.Flour the surface and roll the chapati dough slightly thicker. Then add a generous spoon full of Gobi filling and gather the dough from all sides sealing it properly.
- Now again flatten it slightly with your palms and then start rolling gently. Roll it without the filling oozing out. Dust flour so that it doesn't stick. Heat a dosa tawa , transfer the Gobi parathas, drizzle little oil and cook on both sides.
- Serve hot with onion raita or tomato ketchup or cilantro chutney
