Cracked wheat idli- from my kitchen

Hi friends,

Today I am sharing a very healthy breakfast and easy to make kids will like it with different variation also.
Soon I will upload pics also so that you will enjoy it because without pic you will not be able to guess how it looks.
This recipe is very healthy : here are the ingredients and methods to follow

Ingredients:

1cup Cracked Wheat/Wheat Rawa
1cup Yogurt/Buttermilk (Note: If using yogurt need to add 1/2cup Water)
Salt to taste
1/4tsp Baking Soda
1tbsp Cilantro & Curry leaves chopped finely 

Tempering
1tbsp Oil
1tsp Mustard seeds
1/4tsp Cumin seeds
1/4tsp Asafoetida
1/2 tsp Grated Ginger
3 Green Chillies chopped finely
1/2cup frozen veggies like Peas and Carrot
1/4tsp Garama masala powder


Method
  1. Mix wheat, buttermilk/yogurt, salt and keep it aside.
  2. In small kadai add heat oil, add mustard seeds, when the splutter add rest of the ingredients as mentioned above in tempering section and fry for about 2 mins, add garam masala powder then off the flame and add this mixture to the wheat batter mix well. Set if aside for about 1 or 2 hours for better resuts.
  3. Now in Idli cooker grease the idli plates and pour the batter and steam the idlis for about 15-20  mins.
  4.  Now serve these Idlis with chutney powder or your choice of chutneys.

Gobhi parantha - from my kitchen

Gobhi parantha
Gobhi parantha a dish which can be serve any time whether as a breakfast, lunch or in dinner. You can serve this dish in kitty party as well as Potluck.
Ingredients:
For Filling :

  • Gobi (Cauliflower) : 1-1/2 cup grated
  • Besan(Gram flour) : 2-3 tbsp dry roasted
  • Red Chili :1 tsp
  • Turmeric Powder : 1 tsp
  • Coriander Powder :1 tsp
  • Jeera (Cumin Seeds) : 1 tsp
  • ginger garlic paste
  • Oil : 2 tbsp
  • Salt : to taste

For the chapathi dough:


  • Wheat flour - 1.5 cups
  • Salt - as needed 
  • Oil - 2 tsp
  • Water - as required

Method:

for the filling
  • Now in a pan take 2-3 tbsp of besan and on low heat dry roast and set aside.
  • Add small sized cauliflower florets in hot water and a pinch of salt (to remove worms if any). Drain it completely and then grate them finely - I used my chopper to do this .Set aside. 
  • Heat oil in a pan, add jeera allow it to crackle then add ginger garlic paste and saute till golden brown.
  • Then add grated cauliflower, salt, red chilli powder, turmeric and garam masala powder and mix well.Cover and let it cook for 10 minutes.Remove the lid and cook for few minutes.

  • Add roasted besan and salt to taste and mix well .Cook for 2 minutes and turn off the heat.Let the filling cool down completely.

for the dough
In a bowl mix wheat flour, salt and oil together and water as required slowly mix well and knead a soft dough

Paranthan making 
  • Now divide the chapatti dough into equal parts and roll into smooth balls.Flour the surface and roll the chapati dough slightly thicker. Then add a generous spoon full of Gobi filling and gather the dough from all sides sealing it properly.
  • Now again flatten it slightly with your palms and then start rolling gently. Roll it without the filling oozing out. Dust flour so that it doesn't stick. Heat a dosa tawa , transfer the Gobi parathas, drizzle little oil and cook on both sides.
  •  Serve hot with  onion raita or tomato ketchup or cilantro chutney

Pav bhaji

Pav bhaji cooking my way
Pav bhaji the best street food ever so delicious ,so tasty and  awesome. Its available in every parts of India.
Famous street food from mumbai.
A mouthwatering dish
Ingredients
1 small head of cauliflower, cut into florets (about 3-4 cups)
3 medium potatoes, peeled and cut into large chunks
2 tbsp. oil
1 green bell pepper, minced
1/2 tsp. turmeric powder
1 tsp. chili powder or red chili paste
1 tsp. ginger-garlic paste
salt to taste
2-3 cups finely chopped tomato
1/2 cup peas (fresh or frozen)...optional 
1 tbsp. Everest pav bhaji masala (or more to taste)
1 tbsp. butter


Method

1. Heat a pan add 1/2 tsp butter and 1/2 tsp oil  when it becomes hot add hing , turmeric powder cauliflower florets, potatoes peeled and cut into cubes, green peas,green bell pepper cut into cubes and a salt and transfer this mixture into cooker and take 3 - 4 whistles.


2.Take another pan heat 1/2 tsp butter and 1/2 tsp oil when the oil becomes hot add ginger and garlic paste and turmeric powder, finely chopped onions saute it till it cooks properly then add finely chopped tomatoes cook it for 2-3 minutes then add turmeric powder, red chilli paste and pav bhaji masala and salt then cook it for another 5-7 minutes.



3. After the base of pav bhaji is cooked add all the boiled vegetables too the base and mash all the vegetables properly  and let it cook for another 10 minutes.


Keep sauteeing and mashing it together till it is a smooth mixture, adding water as required.Be aware that the mixture can spurt up as it boils, so keep a lid on it while you are not actively stirring it. Simmer for 10-15 minutes to really get the flavors to meld together
Serve with:
Finely sliced/ chopped onions, minced cilantro and wedges of lemon

Curd rice



Curd rice

A perfect south Indian meal which is now a days common in all over India. Every Indian end up their lunch with this great and easy to make meal. Healthy ingredients and easy to cook in 5 minutes if all the ingredients are available.
I thought of posting this recipe of how to make curd rice and here
 I am this recipe with my kitchen




INGREDIENTS(SERVES 2-3)



RICE(UNCOOKED)1/2 CUP
RED CHILLI FLAKES1
YOGURT |CURD1 CUP
SALTAS NEEDED
OIL1 TSP
MUSTARD SEEDS1/2 TSP
ASAFOETIDA1/4 TSP
GREEN CHILLI1
CURRY LEAVESFEW
CORIANDER LEAVESFEW
CASHEW NUT(OPTIONAL)
ZEERA POWDER(OPTIONAL)
FEW
1/4 TSP

Methods

  • Pressure Cook the rice
    • When done mash the rice nicely with the back of the spoon
    • Then heat oil in a pan then add mustard seeds, green chili , curry leaves , red chili flakes and cashews(optional)
    • pour this tempering on the rice and decorate with finely chopped cilantro
    • put zeera powder (optional)
    • and serve hot or cold as per your requirement whatever tastes you like 

    and this is the best for kids , youngsters or in any age

    Veg poha

     Spicy kanda Poha
    Ingredients:
    ½ kg - poha (thick ones)
    4 to 7 tbsp - oil
    finely chopped onions

    finely chopped boiled potato
    1 tbsp peanuts
    ½ tsp - mustard seeds
    2 - green chilies
    1 tsp - turmeric powder
    2 to 3 tbsp - coriander leaves (finely chopped)
    juice of 1 lemon
    few curry leaves
    salt to taste

    Method:
    1. Wash the poha very well and drain out all the water and keep aside.

    2.Heat oil in a kadhai, add mustard seeds. and peanuts.

    3.When they splutter add finely chopped green chilies, chopped onions and boiled potatoes and curry leaves. and a pinch of turmeric powder too.

    4.Saute it for few minutes (1-2 minutes)

    5.Add poha, salt to taste, turmeric powder, finely chopped coriander leaves, lemon juice

    6.Mix well. Let it simmer for 5 -8 minutes.

    7.
    Serve hot. Garnish with finely chopped coriander leaves.
